TRIM HEALTHY MAMA WEEKLY MENU – OCTOBER (WEEK 4)

Want some ideas for your Trim Healthy Mama weekly menu? Check out what we are eating in October! 

If you follow the Trim Healthy Mama plan or just want healthy meal inspiration and want to know how to make the meals into crossovers for your husband and children, follow along. The added crossovers are in parenthesis.

This weeks menu may feature recipes from Trim Healthy Future (THF) Trim Healthy Cookbook (THC) and Trim Healthy Table (THT). Otherwise links to other websites and bloggers are given.

BREAKFASTS

Whatever we feel like making off the Trim Healthy Mama weekly menu that day, I will have these items on hand. They are a great way to start your morning routine!

  • (S) 2 eggs w/ bacon and biscuits and gravy with THM Biscuit mix (sourdough biscuits)
  • (CO) Sourdough bagels w/ cream cheese or light laughing cow cheese
  • (E)  Apple Pie Oatmeal
  • (E) Apple Cinnamon Swirl Muffin

LUNCHES

These meals are usually easy prep or leftovers. I will prep some of these ahead of the week so are easy to grab and go.

  • (E) Salad w/ lean protein, beans, cucumber and fruit
  • (E) Southern Fried Chicken (THF p.128)
  • leftovers

DINNERS

This is where my Trim Healthy Mama weekly menu really shines! I will usually highlight these items as I make them or write next to them which day I’m planning. I like the flexibility this provides. Sometimes if it’s a busy week, I will assign days to the dinners. 

Also, if your family is like mine, Sunday lunch behaves so much like a dinner in my household with extra family members and fellowship, that is easier to count as a dinner. Sometimes actual Sunday dinner is lighter and sometimes not, depending on the week, so I just plan two easy dinner meals for that day. Actually, I always wanted an extra day my week, wait… I may have gotten that wrong 😉

Crockpot meals are in bold.

  • Sunday Lunch (S) Crockpot Buffalo Chicken (THT p.92) w/ caulirice and sautéed zucchini (br rice)
  • Sunday Dinner (CO) Zuppa Toscana Soup
  • Monday (S) Company Casserole (THF p.158) w/ stuffed jalapeños (THF p.251)
  • Tuesday (S) Beef Carnitas w/ caulirice (sourdough flatbreads)
  • Wednesday (E) Coach Amy’s Potato Soup (ham)
  • Thursday(E) Chicken and Rice with chx breast w/ salad (ranch salad dressing and cheese)
  • Fridays (CO) Taco Pizza w/ THM pizza crust, recipe (sourdough crust or here’s another one)
  • Saturday (S) Kai Si ming (THC p.98)

SNACKS

(These are for me, so I don’t worry about adding crossovers).

  • (E) Cherry Vanilla Kefir Smoothie w/ Cinnamon Sweet Potato fries (THF p.239)
  • (S) Wasa Crackers with Caoch Kanada’s peanut butter
  • (FP) Two Good Pumpkin yogurt
  • (S) Peanut Butter Cookie Dough Bites (THF p.312)

DESSERTS

If I have time and want to make a treat, I will have these on hand or make and freeze portions if possible).

  • (FP) Chocolate Mint Cupcakes (THF p.277)
  • (S) Mocha Layer Cake (THF p.283)
  • (S) Date Night Choc Chip Cookie (THF p.292)

DRINKS/ SMOOTHIES/SIPPERS

  • (FP) Pumpkin Shake with Kefir instead of milk (THF p.73)
  • (FP) Sparkling Cran- Ginger (p.43)
  • (FP) Mint Chip Ice cream Shake (THF p.69)
  • (FP) Immunity Apple Cider (THF p.48)
