I absolutely adore Pearl’s oatmeal recipes, especially her Sweatpants Oatmeal and her PPP Porridge. I found myself adapting them until I found a perfect fit for my family: our Berry Goodness Oatmeal recipe.
It is warm, creamy, and full of berry flavor! As a Trim Healthy Mama recipe, it is great either as an E meal or a CO for my husband and children when I add some eggs or sausage on the side.
Also, it’s extremely easy to multiply for a large family or divide for individuals. My children and husband love it and it is very filling. In fact, it is so requested and simple to make, that this recipe is on my menu every week!
A Note on Substitutions:
I prefer to add the Trim Healthy Mama strawberry protein powder because I think helps to add more flavor variety in my day, but I do enjoy the vanilla version as well and will often substitute it. You can use other brands of protein powder, I just prefer this kind because I know it’s on plan and tastes delicious!
Also, I think any berries would work here. I do, however, enjoy adding the blueberries because they are excellent for concentration which is a great start to our morning routine and homeschool day.
I use unsweetened oat milk that is low in fat (Planet Oat). If I don’t have that available, I will add unsweetened almond milk.
Berry Goodness Oatmeal Recipe
- To a medium sized pot, I add the oatmeal, water, unsweetened almond/oat milk, salt, and raisins.
2. I bring it all to a boil, stir, and reduce the heat for 2-3 minutes while it cooks. Then, I place it off the heat for 10 minutes and don’t touch it.
3. While it is setting, I add the protein powder and blueberries to each separate bowl.
4. When the oatmeal is done, I spoon it into the bowls, stir, and serve!
Enjoy!
