
These sourdough einkorn chocolate chip pancakes are a quick and easy (E) meal for breakfast at my house. My whole family enjoys them!
I am a long time follower of the Farmhouse on Boone and that is where I first found a love for her sourdough chocolate chip pancakes. Her recipe is fantastic! It would be a (CO) crossover as is (if I sub with sugar-free chocolate).
I will often make her recipe for my husband and children if I have extra semi-sweet chocolate chips leftover from baking laying around.
Substitutions
Since I am a Trim Healthy Mama and would prefer to fit this in as an E-meal, I have made a few changes:
- I changed the flour type to not better fit my THM lifestyle and be more gentle on my blood sugar. Also, I have a wheat allergy so I tend to use einkorn flour when baking, cooking. To keep it THM friendly you can use einkorn, whole wheat, or spelt.
- I reduce the amount of fat used in the recipe to fit into an E setting by reducing the coconut oil and replacing the whole eggs with egg whites.
- I substitute the chocolate chips with sugar-free chocolate chips or 85% dark chocolate. Either way I only use about 5 chocolate chips per pancake.
- I don’t add honey to my sourdough pancakes.
The Recipe
- Start by heating a cast iron skillet on medium-low heat and add 1 tbsp coconut oil to melt. I allow it to coat the pan.

2. To a bowl, I measure 2 c sourdough levain or discard. If you use levain, it will make for a fluffier pancake and not be bitter. If you use discard, it will be flatter and have a more complex, sour flavor. Both are delicious! I use whatever I have on hand.

3. Then, I stir in 6 tbsp egg whites and 1/2 tsp salt.
4. Next, pour in melted coconut oil and 1 tsp baking soda. Mix well.

5. When the pan is nice and hot, I add in the pancake batter and a few chocolate chips to each pancake. I can usually fit four in the pan often use a lid to get more even cooking.
6. Flip the pancakes and cook the other side. I know it’s ready to flip when the top is bubbly.
7. Place on plate and enjoy!

Tips
These sourdough einkorn chocolate chip pancakes are great all by themselves. In fact, they are the perfect THM E meal in my opinion! I don’t even miss the syrup. I do add some collagen to my coffee for added protein or have a side of egg whites. However, if you want to add a little something, try sugar-free syrup or butter as a crossover.
For my family, I add regular butter and maple syrup for my kids. Also, they enjoy these with eggs and sausage or bacon. It’s a great way to get the kids going during our morning routine!

- 1/2 tsp salt

- 1/3 c sugar-free chocolate chips or 85% dark chocolate
