Trim Heathy Mama Weekly Menu – October (Week 2)

If you follow the Trim Healthy Mama plan or just want healthy meal inspiration and want to know how to make the meals into crossovers for your husband and children, follow along. The added crossovers are in parenthesis.

This weeks menu may feature recipes from Trim Healthy Future (THF) Trim Healthy Cookbook (THC) and Trim Healthy Table (THT). Otherwise links to other websites and bloggers are given.

BREAKFASTS

Whatever we feel like making off the weekly menu that day, I will have these items on hand. These Trim Healthy Mama meals are a great way to start your morning routine!

  • (S) 2 eggs w/ Avocado and sausage or bacon (toast)
  • (E) Berry Goodness Oatmeal w/ coffee with MCT oil and collagen (butter)
  • (E) Egg White scramble with nutritional yeast and veggies with fruit with a tsp of garlic aioli (toast w/ butter; whole eggs)
  • (E) Zucchini Bread Oatmeal (THF p. 106)

LUNCHES

These meals are usually easy prep or leftovers. I will prep some of these ahead of the week so are easy to grab and go.

  • (S) Stupid Simple Zucchini Alfredo (THT p.309) w/ cheesy flower biscuits (p.248, garlic var.)(pasta)
  • (S) Beat the Cheat pizza (THT p.283) (sourdough)

DINNERS

This is where my Trim Healthy Mama menu really shines! I will usually highlight these items as I make them or write next to them which day I’m planning. I like the flexibility this provides. Sometimes if it’s a busy week, I will assign days to the dinners. 

Also, if your family is like mine, Sunday lunch behaves so much like a dinner in my household with extra family members and fellowship, that is easier to count as a dinner. Sometimes actual Sunday dinner is lighter and sometimes not, depending on the week, so I just plan two easy dinner meals for that day. Actually, I always wanted an extra day my week, wait… I may have gotten that wrong 😉

Crockpot meals are in bold.

  • Sunday Lunch (CO) White Chicken Chili
  • Sunday Dinner (S) Mama’s Famous Meatloaf (THC p.157)(air-fried fries)
  • Monday (S) Sweet and Spicy Chicken (THT p.221)
  • Tuesday (CO) Taco meat w/ black beans, pico de Gallo, avocado, cheese, lettuce and corn tortillas
  • Wednesday (S) Idiot’s chicken (THT p.223)(pasta)
  • Thursday(S) Meatballs, Rice, and gravy (THT p.211)(rice)
  • Fridays (E) Ranch Hand Taco Salad (THT p.200)(Burritos)
  • Saturday (CO) Hawaiian Chicken made with honey w/ rice and veggies

SNACKS

(These are for me, so I don’t worry about adding crossovers).

  • (E) Two good yogurt w/ fruit
  • (E) Pumpkin Bam Cake (THT p.385) w/ collagen tea

DESSERTS

If I have time and want to make a treat, I will have these on hand or make and freeze portions if possible).

  • (S) Coconut Macaroons (THF p.269)
  • (S) R’s Carrot Cake (THF p.281)
  • (S) Choc chip cookie (THF. p.293)

DRINKS/ SMOOTHIES/SIPPERS

  • (FP) Pumpkin Kefir Smoothie
  • (FP) GGMS
  • (FP) Pumpkin Cheesecake Shake Down (THT p.470 variation) Dairy-free and delicious!
  • (FP) Singing Canary
