TRIM HEALTHY MAMA WEEKLY MENU – OCTOBER (WEEK 3)

Want some ideas for your Trim Healthy Mama weekly menu? Check out what we are eating in October! 

If you follow the Trim Healthy Mama plan or just want healthy meal inspiration and want to know how to make the meals into crossovers for your husband and children, follow along. The added crossovers are in parenthesis.

This weeks menu may feature recipes from Trim Healthy Future (THF) Trim Healthy Cookbook (THC) and Trim Healthy Table (THT). Otherwise links to other websites and bloggers are given.

BREAKFASTS

Whatever we feel like making off the weekly menu that day, I will have these items on hand. These Trim Healthy Mama meals are a great way to start your morning routine!

  • (CO) 2 eggs w/ bacon w/ garlic aioli and corn tortillas
  • (E) Berry Goodness Oatmeal (butter and maple syrup instead of protein powder)
  • (S) Pumpkin Spice Pancakes w/ scrambled eggs (sourdough pancakes)

LUNCHES

These meals are usually easy prep or leftovers. I will prep some of these ahead of the week so are easy to grab and go.

  • (E) Salad w/ chicken breast, red kidney beans, and extra veggies like cucumber (cheese and ranch dressing)
  • (S) Creamless Creamy Chicken (THC p.78)(sourdough PB & J)

DINNERS

This is where my Trim Healthy Mama weekly menu really shines! I will usually highlight these items as I make them or write next to them which day I’m planning. I like the flexibility this provides. Sometimes if it’s a busy week, I will assign days to the dinners. 

Also, if your family is like mine, Sunday lunch behaves so much like a dinner in my household with extra family members and fellowship, that is easier to count as a dinner. Sometimes actual Sunday dinner is lighter and sometimes not, depending on the week, so I just plan two easy dinner meals for that day. Actually, I always wanted an extra day my week, wait… I may have gotten that wrong 😉

Crockpot meals are in bold.

  • Sunday Lunch (E) Green Salsa Chicken w/ brown rice and black beans, salsa, and lettuce
  • Sunday Dinner (S) Banging Ranch chicken breast w/ salad and caulirice (THC p.162)(air-fried fries)
  • Monday (S) Beef Stew w/ carrots (potatoes)
  • Tuesday (S) Cornbread Crusted Mexican Pie (THC p.132) (rice)
  • Wednesday (CO) Roast chicken w/ potatoes, sweet potatoes, and onion (I added sweet potatoes)
  • Thursday(S) Taco meat w/ 1/4 c black beans, pico de Gallo, avocado, cheese, lettuce (tortilla chips)
  • Fridays (CO) Creamy Chicken served over potatoes w/ sautéed zucchini
  • Saturday (S) Chicken Florentine (THC p. 46)

SNACKS

(These are for me, so I don’t worry about adding crossovers).

  • (E) Two good yogurt w/ fruit
  • (E) Cherry Vanilla Kefir Smoothie

DESSERTS

If I have time and want to make a treat, I will have these on hand or make and freeze portions if possible).

  • (S) Pumpkin Bam Cake (THT p.385)
  • (S) Lily’s Chocolate Hazelnut chocolate bar (personal choice item)
  • (S) Brownie Fudge (THT p.404)

DRINKS/ SMOOTHIES/SIPPERS

  • (FP) GGMS
  • (FP) Black Cherry Zevia w/ ACV
  • (FP) Singing Canary
